Minus the Muffin Top: Banana Oat Greek Yogurt Muffins

If you're a busy mom and want something healthy for your kids, then you absolutely need to add banana oat Greek yogurt muffins recipe to your list. For something that is moist, chock full of chocolate (without being unhealthy), would be loved by your kids.

It is perfect in your busy schedule as cook time is fifteen minutes with prep time about five to ten minutes and you only need a handful of ingredients to make these scrumptious muffins. They make the perfect grab and go breakfast option which your kids will love.

Banana Oat Greek Yogurt Muffins

Here are all the ingredients you will need below:

  • One cup of Greek yogurt, plain

  • Two bananas, ripe

  • Two eggs

  • Two cups of rolled oats

  • 1/4 cups of brown sugar

  • 1 1/2 teaspoon of baking powder

  • 1/2 teaspoon of baking soda

  • 1/2 cups of mini or regular chocolate chips

And here's how to make the muffins:

  1. Begin by preheating the oven to 400F and spray a muffin tin or tray with cooking spray or use paper liners instead. Set aside for later.

  2. Next prepare a blender or food processor and add in all of the ingredients except for the chocolate chips. Blend the ingredients on high until the consistency becomes smooth and creamy.

  3. Next stir in the chocolate chips by hand or using a hand operated mixer on lower power.

  4. Pour in the batter mix into each muffin cavity in the tray until they are 3/4 full and then bake between fifteen to twenty minutes, or until the tops of the muffins have set and a toothpick test comes back clean.
